Grape varieties
95% of the Domaine de Montvac vineyard is implanted on soils that have a local Vacqueyras or Gigondas appellation.
Our production of red and rosé Cotes du Rhone wines accounts for 20% of the total. This indicates that we deliberately de-class 15% of the best soils to produce the Cotes du Rhone that we market.
Even if the vines concerned are young stocks that aren’t yet 10 years old the soil notion is nevertheless a factor with regard to the quality of the wine.

Vinification
The fermentation temperature control is strict for the Vacqueyras and Gigondas in order to preserve the aromatic power of the grape varieties. However the maceration period is reduced to obtain supple and drinkable wines whose essential characteristic is the complexity of the fruit aromas.

Gastronomy
The powerful aromas and fine tannic structure make them a full wine wthathich can be enjoyed as from the first year, with cold meats, cooked vegetables and grills with Provence herbs, or kept for 3 or 4 years.
