Grape Varieties
Our Gigondas appellation vineyard is situated solely on the steeply sloped flanks of the Dentelles de Montmirail, whose formation goes back to the tertiary era. Our small south-west facing plots are set on banks, which we call “Restanques” in Provence, with iron clay soils and calcareous, plaster stone outcrops.
The plots are bordered by pine trees and gorse bushes and benefit from a microclimate ideal for ripening the grape varieties: Syrah at altitude and Mourvèdre in the sheltered dales alongside the emblematic Grenache.

Vinification
This special environment, as well as a natural low yield, enables us to elaborate, via a long term vinification at controlled temperatures, fleshy wines with wild garrigue and spicy perfumes that mingle with the varieties' typical aromas.
Through ageing in casks they become unctuous and achieve their maturity in 3 to 5 years, but may be kept 10 years or more for the better years.

Gastronomy
We recommend them for all meats with sauces, game and cheese. When young they may also be served with peppered dishes or subtle sweet and sour dishes.
