Grape Varieties
A wine with great expression resulting from old, low yield vines.
Grenache is the main noble grape variety of all of the southern Cotes du Rhone wines. It is difficult to master, as it is sensitive to the washing away of the pollen, grey rot and an excessive vigour in its prime of youth. Like a man it must attain the age of thirty to achieve a fully formed character, and like a man, it will be at its best when reaching maturity.
It is therefore a great pleasure to contemplate a well-formed bunch of grapes with its small black pips and spaces revealing glimpses of an iridescent green stalk and to know, even before the harvest and cautious placing in the tanks, that the wine produced will be exceptional.

Vinification
That is the story of Variation: a small plot of vines, bordered by pine trees that shelter it from the destructive gusts of the Mistral, with its old vine stocks parsimoniously producing a few aired bunches of grapes, a slightly over mature harvest to obtain the soft tannins and aromas of candied fruits and spices, a very slow vinification over a few weeks and then, nothing else.
Just pure nature.

Gastronomy
Fleshy and powerful with an exceptional character that will delight knowledgeable amateurs.
